  • ½ cup Sweet chili sauce store-bought or homemade
  • ¼ cup Soy sauce or tamari or coconut aminos
  • 2 tablespoons Honey
  • 2 Limes juiced
  • ½ teaspoon Ground ginger or fresh grated
  • 2 Chicken breasts sliced in half
  • 2 tablespoons Olive oil or other cooking oil
  • 1 Green onion thinly sliced
  • 4 wedges Lime wedges

  • In a large bowl, mix sweet chili sauce, soy sauce, honey, ground ginger, and lime juice until combined.
  • Reserve ½ cup of the marinade in a separate bowl to drizzle later.
  • Heat olive oil in a skillet over medium heat. Sear chicken cutlets on each side for about 5 minutes until browned.
  • Place seared chicken and remaining marinade into the pressure cooker. Lock lid and cook at high pressure for 10 minutes. Quick-release pressure carefully.
  • Serve chicken topped with green onion, drizzle reserved sauce, and add lime wedges for garnish.

Notes

Leftovers can be refrigerated for up to 4 days or frozen for longer storage. Great shredded in tacos or tossed with rice and veggies for a stir-fry.
