Mix all sauce ingredients together in a small bowl and set aside.
Heat oil in a pan on medium heat. Add chicken pieces and cook for 6–8 minutes until browned and cooked through. Remove and set aside.
In the same pan, add garlic and ginger. Sauté for 1–2 minutes until fragrant.
Add chopped onions and bell peppers. Stir-fry for 3–4 minutes until soft but still holding shape.
Add spring onions, cabbage, and carrot sticks. Stir-fry for another 3–4 minutes.
Cook ramen noodles per package instructions. Drain and discard seasoning packets.
Add the chicken back to the pan with the vegetables.
Pour in the sauce and stir to combine everything evenly.
Add cooked noodles and toss until evenly coated and heated through. Serve hot.
Notes
Top with sesame seeds or extra green onions for added flair.
