Ingredients
  

  • 1 lb lean ground beef
  • ½ lb ground turkey
  • 1 cup gluten-free breadcrumbs
  • 2 large eggs
  • ½ cup onion, finely chopped
  • ½ cup bell pepper, finely chopped
  • ¼ cup ketchup plus more for topping
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs or thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease your loaf pan or line it with parchment paper.
  • In a large mixing bowl, combine the ground beef, ground turkey, gluten-free breadcrumbs, eggs, chopped onion, chopped bell pepper, ketchup, Worcestershire sauce, garlic powder, Italian herbs, salt, and pepper.
  • Mix all the ingredients together until well incorporated, being careful not to overmix.
  • Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.
  • Spread a thin layer of ketchup on top of the meatloaf for added flavor.
  • Place the loaf pan on a baking sheet to catch any drippings and bake in the preheated oven for 60 minutes, or until the internal temperature reaches 160°F (70°C).
  • Remove from the oven and let it rest for about 10 minutes before slicing.

Notes

For a sweeter meatloaf, you can mix a tablespoon of brown sugar into the ketchup topping.
Feel free to add your favorite chopped vegetables or herbs for extra flavor and nutrition.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and are also great for sandwiches!
