Ingredients
  

  • 1 lb ground beef
  • 1 cup gluten-free breadcrumbs
  • ½ cup milk dairy or non-dairy
  • ½ cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ¼ cup ketchup plus extra for topping
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the ground beef, gluten-free breadcrumbs, milk, chopped onion, minced garlic, egg, ketchup, dried thyme, salt, and black pepper. Mix well until all ingredients are fully incorporated, using your hands if necessary.
  • Transfer the meat mixture into a loaf pan and shape it into a loaf. Smooth the top slightly and spread a layer of ketchup over the surface to keep it moist and flavorful.
  • Place the loaf pan on a baking sheet to catch any drips. Bake in the preheated oven for 50 minutes, or until the internal temperature reaches 160°F (70°C) when checked with a meat thermometer.
  • Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
  • Serve with your favorite gluten-free sides, such as mashed potatoes or green beans.
