  • 2 boneless, skinless chicken breasts
  • 2 burger buns
  • 1 avocado mashed with salt, pepper, and lemon juice
  • 2 tablespoon olive oil
  • 0.25 cup Korean hot sauce like Gochujang
  • 2 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 1 cup shredded red cabbage
  • 0.5 cup fresh sweet corn
  • 2 medium carrots grated
  • 0.5 cup Greek yogurt can use fat free
  • 2 teaspoon mustard
  • 1 lemon juiced

  • Preheat your grill or grill pan over medium-high heat.
  • Mix Korean hot sauce, honey, and toasted sesame oil in a small bowl to make your BBQ sauce.
  • Brush your chicken breasts with olive oil, and season with salt and pepper.
  • Grill the chicken for about 5 to 7 minutes per side until cooked through and charred.
  • During the last 2 minutes of grilling, brush chicken with Korean BBQ sauce to coat.
  • Toast burger buns on the grill for about 1 minute until golden.
  • Spread mashed avocado on the bottom bun. Layer grilled chicken, red cabbage, corn, and carrots.
  • Top with the other bun and serve hot. Optionally, serve extra Korean BBQ sauce on the side.

Notes

You can make the BBQ sauce ahead of time and refrigerate it for quick assembly. Grilled chicken can be stored in an airtight container for up to 3 days.
