  • 6-8 chicken tenders for perfect slider size
  • 2 egg whites
  • 1 cup buttermilk or homemade with milk and vinegar
  • 1 teaspoon salt for marinating
  • 1 teaspoon pepper for marinating
  • 1 cup all purpose flour
  • 2 tablespoon cornstarch
  • 6 teaspoon baking powder
  • Salt and pepper additional to season flour mix
  • 2-3 tablespoon cayenne pepper adjust to taste
  • 1 tablespoon paprika
  • 1.5 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 12 mini slider buns or 6-8 full sized buns
  • pickles for topping
  • shredded cabbage for topping
  • mayo and ketchup for spreading on buns
  • 2 inches vegetable oil for frying

  • Whisk egg whites and buttermilk with salt and pepper in a large bowl. Add chicken tenders and let them marinate for 30 minutes at least.
  • Mix flour, cornstarch, baking powder, salt, and pepper in another bowl for your coating blend.
  • Take chicken from marinade and let excess drip off. Dredge each tender in the flour mix, pressing it on so it sticks real good.
  • Heat two inches of vegetable oil in a deep skillet or wok until it reaches 350°F. Fry chicken in batches for 6 to 8 minutes till golden and fully cooked.
  • Transfer fried chicken to a wire rack to drain any extra oil. This keeps them crispy and not soggy.
  • Mix up your Nashville hot sauce by stirring cayenne, paprika, brown sugar, garlic powder, salt, and a splash of hot vegetable oil right from your frying pan.
  • Brush the spicy hot oil mixture over each piece of fried chicken. Toast slider buns, layer pickles, spicy chicken and top buns. Serve hot.
