Wash the beefsteak tomatoes thoroughly, core them, and slice into bite-sized wedges.
In a large bowl, combine sour cream, mayonnaise, grated garlic, and chopped dill to prepare the dressing.
Season the dressing with salt and pepper. Stir gently and taste to adjust flavor balance.
Add the tomato slices to the bowl and gently toss to coat each piece with the dressing.
Let the salad sit for 10 minutes, then give it a soft toss again before serving. Serve chilled or at room temperature.
Notes
To prep ahead, store the dressing and tomatoes separately until ready to serve. Keeps well for up to 3 days in the fridge.
