Preheat your oven to 375°F. In a large bowl, mix ground beef, Romano cheese, Italian bread crumbs, garlic, and eggs thoroughly.
Flatten the meat mixture into a rectangle on parchment paper about half an inch thick.
Layer mozzarella slices, fresh spinach, and hot ham over the top without going to the edges.
Roll the meat tightly using the parchment paper, pinching the edges to seal.
Place rolled meatloaf seam-side down into a baking dish.
Spread marinara sauce over the top.
Bake for 55 to 60 minutes, until internal temperature reaches 160°F.
Remove from oven and let rest for 10 minutes before slicing.
Serve hot with extra marinara sauce if desired.
Notes
Let the meatloaf rest after baking to keep juices inside. Freezes great — wrap individual slices for easy meals later.
