While the wings are baking, prepare the Bang Bang sauce by whisking together the vegan mayonnaise, sriracha, maple syrup, and rice vinegar in a bowl. Adjust the spice level to your preference by adding more sriracha.
Once the cauliflower wings are done baking, remove them from the oven and let them cool slightly. Toss them in the Bang Bang sauce until evenly coated.
Serve the Vegan Bang Bang Cauliflower Wings warm, garnished with chopped green onions or sesame seeds if desired.
