Preheat oven to 375°F.
Steam or sauté zucchini, broccoli, and squash until tender but not mushy.
Mix cottage cheese with beaten eggs, salt, and pepper in a bowl.
Grease the baking dish and spread a thin layer of cottage cheese mixture at the bottom.
Layer lasagna noodles, vegetables, and cheese mixture; repeat layers ending with cheese on top.
Top with shredded mozzarella and cheddar cheese.
Cover with foil and bake for 25 minutes.
Remove foil and bake uncovered for another 10 minutes until golden and bubbly.
Let rest for 10 minutes before slicing and serving.
Notes
Store leftovers in the fridge for up to 4 days or freeze for extended storage. Reheat gently with a little water and covered to retain moisture.
