  • 1 pound Chicken breasts boneless, skinless, chopped into bite-sized pieces
  • 1 teaspoon Garlic powder to sprinkle over that chicken before searing
  • Salt and pepper to taste
  • 3 cloves Garlic minced fresh
  • 1 cup Heavy cream brings the sauce creamy goodness
  • ½ cup Chicken broth helps keep things moist and full of flavor
  • ½ cup Parmesan cheese grated
  • 2 cups Cooked white rice for serving
  • 1 tablespoon Fresh parsley chopped, for topping

  • Heat olive oil in your pressure cooker's skillet or a large pan until it’s nice and warm.
  • Season the chicken with garlic powder, salt, and pepper all over so every piece’s got flavor.
  • Add chicken to the hot oil and cook until browned and cooked through, about 6-8 minutes.
  • Stir in minced fresh garlic and sauté for about a minute until fragrant.
  • Pour in the heavy cream and chicken broth, then stir to mix everything together.
  • Close the lid and pressure cook on high for 5 minutes.
  • Do a quick release on the valve to stop cooking.
  • Open lid and stir in Parmesan cheese until sauce is smooth.
  • Serve chicken and sauce over cooked white rice. Top with parsley if desired.

Notes

Store leftovers in an airtight container up to 4 days. You can freeze portions and reheat for easy meal prep. Works well over vegetables or in wraps too!
