- 1 pound boneless, skinless chicken breast About 450g.
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans white beans, rinsed and drained 15 oz each.
- 4 cups chicken broth About 1 liter.
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- 1 can diced green chilies 4 oz.

- ½ cup sour cream Optional, for serving.
- to taste chopped cilantro Optional, for garnish.
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and diced bell pepper to the pot, sautéing until softened, about 5 minutes.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Cut the chicken breast into bite-sized pieces and add to the pot. Cook until the chicken is no longer pink, about 5-7 minutes.
Stir in the rinsed white beans, chicken broth, ground cumin, chili powder, smoked paprika, and diced green chilies. Bring the mixture to a boil.
Once boiling, reduce the heat to low and let it simmer for 20 minutes to allow flavors to meld. Stir occasionally.
Season with salt and pepper to taste. If desired, stir in the sour cream for creaminess.
