Ingredients
  

  • 1 pound boneless, skinless chicken breast About 450g.
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cans white beans, rinsed and drained 15 oz each.
  • 4 cups chicken broth About 1 liter.
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 1 can diced green chilies 4 oz.
  • to taste salt and pepper
  • ½ cup sour cream Optional, for serving.
  • to taste chopped cilantro Optional, for garnish.

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the chopped onion and diced bell pepper to the pot, sautéing until softened, about 5 minutes.
  • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  • Cut the chicken breast into bite-sized pieces and add to the pot. Cook until the chicken is no longer pink, about 5-7 minutes.
  • Stir in the rinsed white beans, chicken broth, ground cumin, chili powder, smoked paprika, and diced green chilies. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low and let it simmer for 20 minutes to allow flavors to meld. Stir occasionally.
  • Season with salt and pepper to taste. If desired, stir in the sour cream for creaminess.
  • Serve hot, garnished with chopped cilantro.

Notes

This chili freezes well, making it great for meal prep.
Serve with tortilla chips, cornbread, or over rice for a complete meal.
Adjust the spice level by adding more chili powder or hot sauce if desired.
