- 1 can (10 oz) red enchilada sauce
- 1 cup sour cream
- 1 cup chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup corn (canned or frozen)
- 1 cup black beans drained and rinsed
- 1.5 cups shredded cheese (cheddar or a Mexican blend)
- 8 pieces corn tortillas, cut into strips
