  • cup gluten free all purpose flour 47 grams
  • 1 clove garlic pressed or minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 egg beaten
  • 1 ½ teaspoons salt divided
  • 2 tablespoons pizza sauce
  • 3 stalks asparagus sliced in half and cut into 2 inch long pieces
  • 6 cherry tomatoes sliced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 2 eggs for topping
  • 2 tablespoons grated parmesan optional
  • fresh basil or herbs optional for garnish

  • Preheat your oven to 425F (220C). You want it nice and hot to get that crust crispy and golden.
  • Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This steps key to keep your crust from getting soggy, so dont skip it or be lazy.
  • In a large bowl, mix zucchini, mozzarella, gluten free flour, garlic, oregano, basil, beaten egg, and 1 teaspoon of salt. Stir it real good until it all comes together.
  • Line a baking sheet with parchment paper and spread the mixture into a thin round shape, about ¼ inch thick. You want it kinda even, so it cooks uniformly.
  • Bake the crust for 15 to 20 minutes until its golden and pretty firm. Keep an eye but dont open the oven too much, you want that heat steady.
