- 1 pound Italian sausage bulk or casings removed.
- 1 medium onion diced.
- 3 cloves garlic minced.
- 4 medium potatoes diced.
- 6 cups chicken broth
- 1 bunch kale about 8 ounces, chopped.
- 1 cup heavy cream
- 1 teaspoon red pepper flakes adjust to taste.

- 1 tablespoon olive oil for cooking.
In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
Once the sausage is cooked, add the diced onion and minced garlic. Sauté for about 3-4 minutes, until the onion becomes translucent.
Stir in the diced potatoes and chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 15 minutes, or until the potatoes are tender.
Add the chopped kale, heavy cream, and red pepper flakes. Stir to combine and let it simmer for another 5 minutes to allow the flavors to meld together.
Season with salt and pepper to taste before serving.
For a lighter version, you can use turkey sausage instead of pork sausage.
If you want to add more vegetables, carrots and celery would also work well in this soup.
Serve with crusty bread for a complete meal.
