  • 4 oz Salmon fillets skin-on
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ teaspoon Garlic powder
  • 1 Lemon zest and juice
  • 1 tablespoon Olive oil
  • 3 cloves Fresh garlic minced
  • 4 tablespoon Butter

  • Rinse your salmon filets and pat ‘em dry with paper towels.
  • Mix salt, black pepper, garlic powder, and lemon zest in a small bowl.
  • Rub the mixture all over the flesh side of the salmon filets.
  • Heat a cast iron skillet over medium-high heat and add olive oil.
  • Add salmon skin-side down. Cook for 3-4 minutes until skin is crispy and golden brown.
  • Flip the salmon and cook for 2-3 more minutes.
  • Add in butter and minced garlic. Spoon melted butter over salmon.
  • Squeeze fresh lemon juice over salmon and cook for an additional 1 minute until done to your liking.
  • Check for doneness with a meat thermometer (125°F for medium rare).

Notes

Use pre-minced garlic to save time. A non-stick pan can substitute for cast iron. If skipping the thermometer, look for opaque flesh and flaking texture. Squeeze fresh lemon when serving leftovers for revived brightness.
