  • 1 package Udon noodles fresh or frozen; or about 3 oz dry
  • 1 tablespoon Butter salted
  • 1 tablespoon Water
  • 0.5 teaspoon Dashi powder
  • 1 tablespoon Soy sauce
  • 3 Green onions finely chopped
  • Shredded nori for garnish
  • Bonito flakes aka katsuobushi, for garnish

  • Bring a pot of water to boil. Add the udon noodles and cook according to package directions. Drain and set aside.
  • In your pressure cooker, melt the butter on medium heat using sauté mode.
  • Add the water and dashi powder, stirring until dissolved to create the broth base.
  • Add the cooked udon noodles to the cooker and pour in the soy sauce. Toss to coat the noodles evenly.
  • Seal the cooker and cook on high pressure for 1 minute. Use quick release when done.
  • Open the lid and stir in the green onions. Sauté for 1 minute to warm them slightly.
  • Plate the noodles and top with shredded nori and bonito flakes. Serve immediately.

Notes

For added protein, feel free to sauté tofu, chicken, or mushrooms with the noodles after pressure cooking.
